In my opinion, cheesecake is the almost-perfect keto dessert—except for its sugar and crust. Here, I make the crust with almond flour and the filling with stevia instead of cane sugar. When one of those chocolate cravings hits, I like to add chunks of dark chocolate or small pieces of fruit. Play around with your favorite add-ins to the make this dessert recipe your own.

INGREDIENTS

4 tablespoons butter
1⁄2 cup almond flour
2 cups cream cheese, at room temperature
3/4 cup stevia, or other sugar substitute
1 teaspoon pure vanilla extract
1⁄2 teaspoon freshly squeezed lemon juice

PREPARE

  1. Preheat the oven to 300°F.
  2. In a medium microwaveable bowl, microwave the butter on high for 20 seconds, or until melted. Add the almond flour to the bowl. Mix to combine.
  3. In a cupcake pan, divide the almond flour crust evenly among the cups. Press the mixture firmly into the bottom of each. Place the pan in the preheated oven. Bake for 10 minutes. Remove from the oven. Set aside.
  4. In a large bowl, mix together the cream cheese, stevia, vanilla, and lemon juice.
  5. Top each crust with an equal amount of the cream cheese batter.
  6. Return the pan to the oven. Bake for 15 minutes.
  7. Increase the heat to 350°F. Bake for 10 minutes more.
  8. Remove from the oven. Cool for 5 minutes.
